Caramelized Ginger Pumpkin

This is a great idea of a side dish and an easy recipe.

• 2 cups diced pumpkin
• 2 tbsp. cultured butter or coconut oil ghee
• 1- 2 small onions cubed
• 1- 2 cloves of garlic
• 1 tsp. grated, fresh ginger
• 1/2 tsp. of fresh chopped parsley
• Melt the butter in a large skillet over medium heat, add cubed onions and diced garlic and cook for 4-5 minutes or until translucent.
• Add diced pumpkin in a single layer for even cooking.
• Cook for about 10 minutes.
• Stir occasionally; be careful not to crush the pumpkin pieces.
• Remove from the heat and stir in ginger fresh chopped parsley.
• Enjoy as a side dish with your meets!
