One of the most useful oils in the food supply comes from the coconut. Coconut oil has suffered from unjust criticism for more than 30 years in the United States.

Half of the fat content in coconut oil is lauric acid—a fat rarely found in nature—that could easily qualify as a “miracle” ingredient because of its unique health promoting properties. Your body converts lauric acid into monolaurin, which has anti-viral, anti-bacterial and anti-protozoa properties. Additionally, the naturally occurring saturated fat found in coconut oil has some amazing health benefits, such as:
• Promoting heart health
• Supporting immune system health
• Providing you with an immediate energy source instead of simple carbohydrates, sending medium-chain fatty acids directly to the liver to use as energy).
• Promoting weight loss
• Supporting a healthy metabolism
• Supporting the proper functioning of your thyroid gland
• LOWERS LP(A)- a blood marker that is a much more accurate indication of proneness to heart attack than cholesterol levels
• POISON ANTIDOTE (a successful treatment for acute aluminium phosphide poisoning).
• ANTI-MICROBIAL (kills completely or stops the growth of some of the most dangerous viruses and bacteria.

Furthermore, it is believed the benefits of ketone bodies- an alternative fuel for your brain which your body makes when digesting coconut oil- may extend to a number of health conditions, including:
• Alzheimer’s disease
• Parkinson’s disease
• Huntington’s disease
• Multiple sclerosis
• Amyotrophic lateral sclerosis (ALS or Lou Gehrig’s disease)
• Drug resistant epilepsy
• Brittle type I diabetes
• Insulin resistance and type 2 diabetes
• Improved recovery after heart attack

Refined coconut oil is the ideal choice for all types of cooking because of its high smoke point while unrefined coconut oil which has a lower smoke point is best for eating raw. Refined coconut oil is one of not too many oils stable enough to resist mild heat-induced damage. So, whenever you need an oil to cook or bake with, use refined coconut oil instead of butter or most vegetable oils called for in recipes. It has a nice nutty, vanilla flavor with a touch of sweetness great for baking and sautéing.

Because of its stability, it is slow to oxidize and, thus, resistant to rancidity, lasting up to two years due to high saturated fat content. I typically use coconut oil for cooking, baking, and even as skin and hair moisturizer in place of in store bought products.
